Today was Benjamin's first market in Boston, which was 7 hours long and hopefully went well. That left me to make the cheese today, and on the whole it went pretty well. I made 64 little camemberts, and didn't forget any ingredients. The only thing I'm not super happy with is that I cut the curds too small, so they aren't quite the right texture. Hopefully it's not too off and will still be good.
