Definitely a long one today. There was a batch of quark started last night, but it wasn't quite ready to hang first thing in the morning, so I got a late start on the yoghurt. That kind of threw off my usual timeline, plus we needed to make a batch of camembert. However, I managed to squeeze it all in before Benjamin got back from market.
I got an impromptu (as they usually are) lesson in mesophilic cultures; as I went to put the culture in the camembert I discovered we were out of the usual strain. Fortunately, we have a few cheesemaking books handy for just such an occasion as this. (Namely, Lydia not knowing what to do.) I found one that discussed the different qualities of the different starters and chose an appropriate substitute. When Benjamin returned, he was satisfied with my decision, and we talked a little more about the interchangeable-ness of different cultures.
